Easy Pinto Bean Soup

Hey Guys,

This easy recipe will surely warm you up on those Chilly Days or Nights, for that matter. It's really easy, it just takes patience. Oh never mind patience, it'still really easy.

Go ahead and try it out for yourself and let me know how you like it.

Ingredients


1 lg. onion roughly chopped
2 stalks of celery chopped
2 lg. carrots chopped
1 med. to lg. tomato diced
1/2 lg. green pepper roughly chopped
3-4 cloves of garlic - minced (I love garlic!)
1/2 lb. beef sausage cut into bite sized pieces (you can substitute with chicken, fish, shrimp, or no meat at all)
If substituting with shrimp make sure to add them when the vegetables are almost done, since shrimp become rubbery when overcooked. YUCK! Who likes rubber Shrimp!

1 lb. uncooked (dry) pinto beans
1 Tbs. dry sweet basil
1 Tbs. seasoning salt
Salt & Pepper to taste

Directions


  1. Preferably, soak you beans over night and rinse thoroughly. Place them in a deep pot. Cover with water and set to boil for 20 minutes.
  2. Place the optional meat desired (not shrimp) in to the pot with the beans. This should cook for about 5-6 minutes. This will give the pot its flavor.
  3. Place all seasonings along with the onion, celery, green pepper, minced garlic, and carrots in pot. Put tomatoes in at the end.
  4. Simmer on medium-low heat for about 2 - 2 1/2 hours until beans are cooked completely.

You could make some rice for the side, but basically this recipe is great all by itself.
